Smoking wood chips are the best way to impart a woods flavor when slow smoking fish or meat. Can also be used on grills. When using briquettes simply spread soaked chips on coals. For gas grills, if you want to save the mess place soaked chips in a metal can or wrap in aluminum foil tube with ends open and place above flames. Once chips begin to smoke, cook me as usual.
